⑬What’s on our table? Gregarious Chinese and our delicious food @ Oakland, Squirrel Hill, Mt.Washington




A very good Chinese male friend of mine once lectured me, “If you are to be a good wife, you have to be able to cook good food for your husband and children.” Also, a very good Chinese female friend once secretly confessed to me that she would only want to marry a man who can cook well…..

Well, you get the idea that how important FOOD is to Chinese people. As a matter of fact, food is the center of a lot of things as it has been for thousands of years. We enhance friendship through eating together, and we would prefer a big lunch or dinner before discussing any business, then when the meal is done, business is done too. As you can see from the pictures: where there is Chinese people, there is Chinese food, where there is Chinese food, there is a lot of Chinese people.

I believe our culture influence brewed for thousands of years is so strong that we subconsciously take it with us going anywhere. Now I have been part of the culture messenger to bring it here in Pittsburgh.

Not only we ourselves enjoy meal together during holidays or friend get-together, we are willing to invite our “foreign” friends to our apartment or our dinner table to try out oriental things they don’t get that often.

I was also invited to good family friends, Siew and Bob’s house for a hotpot celebration for Spring Festival. Siew has been living in the U.S and married to a wonderful American husband for about 40 years, yet she still carries Malaysian Chinese culture trace, which made me so proud of her in many ways.

Also I am so pleased that many friends choose to be open-minded and try out smelly Chinese food. This meant a lot. +Amaris Whitaker was invited to my apartment for a Chinese dinner and tea. Her enthusiasm of trying itself meant so much to me. Don’t you agree that a lot of times, all the world needs is a little bit more understanding. How can you understand without trying to do so? Just like if you don’t try Mountain Dew, how can you know you would love it so much that it can be dangerously addictive!

Well, here in Pittsburgh, we are not all about eating after all. For example, we don’t have food in front of us: when we finish eating and try to make funny faces to burn some energy, after all we are fun people; when we study and try to be competitive at school, so many people, if we don’t work hard, we would be discarded;  when we want to be professional and look good in public; and when we sleep, of course. Nobody eats while sleeps. We are of no difference by any means.

Just like going Chinese grocery shopping, I love to be immersed into the Chinese circle once every a while so that I know I am not alone in a place Chinatown is too big a word to be established in a small city like Pittsburgh. However, as Pittsburgh is attracting more and more internationals, hopefully by 2030, we would have a Chinatown or that sort.

1. You may hear people talking about Eight Culinary traditions of China. They are divided based on different geographic locations where a certain type of cuisine is most popular. The most popular eight regionals are Anhui (Hui), Canton (Yue), Fujian(Min), Hunan(Xiang), Jiangsu(Su), Shandong(Lu), Szechuan(Chuan), and Zhejiang(Zhe). Correspondingly, the most popular Chinese cuisines are named after the abbreviation of each region(province) The above eight culinary tradition doesn't include any minority ethnicity, for their unique culture tradition compared to the Majority Han ethnic.
Most dominantly, four cuisines are very popular in the U.S., namely, Chuan & Xiang cuisine, famous for their spicy flavor; Yue cuisine, notable for its delicate “Dim Sum” (点心) size and visual appeal; and Min cuisine, which is often served in a broth or soup, with cooking techniques including braising, stewing, steaming and boiling.
Most American’s favorite dish sweet and sour carp is a Lu cuisine dish.
2.Prominent styles of Chinese cuisine outside China include Singaporean, Malaysian, Indonesian, Indian, and American, but as the wiki page said “there is Chinese cuisine wherever Chinese people are found.”
